[with apologies to folks not in countries celebrating this holiday, who may be sick of hearing about it]

Partner and I started planning Thanksgiving Dinner the other night. There are going to be anywhere from 7-10 people here. Eesh. I started making a list, but it Did Not Work for partner's brain. So instead we have a visual representation of everything *on* the list, along with symbols for whether it needs to be served hot (prep at the time) or cold (prep before), or if someone else is bringing that particular dish.

In case anyone is interested, here are a couple of really delicious recipes we've used over the years. If you notice that many of them are from FoodWishes, you would be correct.

And if you're looking for the Pumpkin Muffin recipe, I'm going to put it below a cut. Might ask partner for links to some of the recipes she knows more about (like crispy duck).

Pumpkin Muffins
shamelessly adapted from Dr. Weil's recipe

2 cups pumpkin puree
3/4-1 cup maple syrup or brown sugar in a pinch
3 tbps. light olive oil or canola oil
2 cups whole wheat pastry flour
1 tsp baking soda
1/2 tsp salt (optional)
1/4 tsp. ground cloves
1/4 tsp. powdered ginger
1 tsp. cinnamon
3/4 cup walnuts, chopped (leave out if someone has nut allergies and substitute dried fruit)
  1. Preheat oven to 350 F.
  2. Mix wet ingredients (pumpkin, syrup, oil).
  3. In a separate bowl, mix dry ingredients (flour, baking soda, salt, spices, walnuts/dried fruit).
  4. Blend the dry ingredients into the wet ones until just combined; I usually add half the dry ingredients, mix, and then add the other half but you really don't have to be so finicky.
  5. Divide the batter equally into 12 cups of a nonstick muffin pan (or do what I do and make mini muffins in the tiny tins).
  6. Bake for 45 minutes, or slightly less if using the smaller muffin tins. Remove from oven, let cool slightly,and remove muffins from pan.
